Do you know what November 1st is? It's actually "Authentic Shochu & Awamori Day" ✨

Today, let's celebrate the beauty of shochu, a traditional Japanese drink that stands alongside sake and is a source of pride for Japan!

This anniversary is said to have been established around the time when the new shochu of the year is first sipped. Why not take this opportunity to take a peek into the world of authentic shochu and awamori, two traditional Japanese drinks? 👀🍶

この記念日は1987年に日本酒造組合中央会がその年の新酒が味わえる時期ということや「焼酎文化を広めたい」想いで制定されました。

そして、日本の風土と技が生んだ一杯が、今また世界中で注目されています🌏✨

Being  an alumni of the exclusive Master Sake Sommelier® qualification, we’re extremely excited to introduce founder of Sacre Sake @agedsake.de Kai, who will be focussing on classroom based, in-person courses in Germany 📚

From the German vineyards to the rice fields of Japan, Kai has an impressive background in wine and sake 🍶🌾 During the 9 years he lived in Japan, he personally journeyed to over 30 breweries, coming to understand the art of sake in depth and the culture that surrounds the delicious drink 🥂

Kai’s expertise in aged sake and passion to bring its traditions to Europe, pair well with the rich history of brewing in Germany 🍻. We hope you get the chance to experience it at his upcoming courses, with Introductory Sake Professional® classes coming up in November and January 🗓️

We are thrilled to announce that the Master Sake Sommelier® – the world’s highest sake qualification – will be taught in the United States for the very first time this coming January 🍶🇺🇸

Did you know the design behind our famous Introductory Sake Professional lapel badge?
The Introductory course’s badge is inspired by two key ways to enjoy sake: an ochoko and a masu 🍶 

An ochoko is a small traditional cup used for drinking sake. Its compact size isn’t just charming — it invites thoughtful sipping and turns every pour into an act of hospitality 🙇‍♀️

A masu was originally a square box used to measure one portion of rice; and these were often made of woods with antibacterial properties. Nowadays masu are largely used as another form of drinking vessel for sake, poured until the moment that the sake might overflow from the box 💠

At the Sake Sommelier Association, we’ve honoured these traditions by designing our Introductory Sake Professional (ISP) badge to combine the shapes of an ochoko, a masu, and our logo — a symbol of the journey into the world of sake 🌟

The Introductory Sake Professional is the very step in our line of Sake Sommelier course. It introduces everything from sake’s origins & culture to ingredients, production, tasting, and serving etiquette. This shorter course offers hands-on learning, guided tastings of fantastic sake, and students who pass earn their certificate and the lapel badge to proudly show their new qualification - your first step into the sake world 🌸

    Hello from sunny Miami ☀️ We’re delighted t Hello from sunny Miami ☀️

We’re delighted to welcome a passionate new Sake Educator to our global family — Haidar Hachem @the_thirsty_samurai has officially joined the Sake Sommelier Association as a Sake Educator, working with @sakewithnoah at the Southeastern Sake School in Florida! 🇺🇸✨ 

Born in Miami, Haidar began his career as a civil engineer before discovering a passion for brewing that led him from beer to sake. First a Certified Cicerone, BJCP Beer Judge, and a graduate of our Master of Sake brewer’s course, and now also a Sake Educator! In 2023, he and his wife Marilyn co-founded Florida’s first sake brewery, @shojosdojo  under their brand Shōjō Brewing @shojobrewing 🍶 

Based in vibrant Miami 🏖️ Haidar has just taught his first Sake Sommelier course - with lots more to come! Utilising his unique mix of brewing know-how and passion for sake, he’s on a mission to share the beauty of Japanese sake with the Florida community and beyond. 🍶

    Congratulations to Kaiser Khoo @anguished.autumn Congratulations to Kaiser Khoo @anguished.autumn on graduating from our prestigious Master of Sake® course! 🎉

Kaiser first discovered sake through wine education during his time as a flight attendant with Singapore Airlines. Captivated by its depth and cultural roots, he began exploring how sake might connect with Western culinary and financial worlds. He is currently pursuing an MBA at Cornell University to build the skills needed for future endeavours in this space.

He joined the course to deepen his technical and cultural understanding of sake and is currently exploring the possibility of launching a premium sake brewery in upstate New York, where he hopes to work with high-quality local water and regional rice to craft refined, terroir-driven sake.

We extend our heartfelt thanks to our partners at Nishiyama Brewery (@kotsuzmi) for their passion and guidance throughout Kaiser’s Master of Sake course. ✨
Founded in 1849, The brewery has been innovating while preserving tradition for 176 years. Their fermentation hub, Koden (@kotsuzmi_hakkoh) showcases traditional techniques and serves as a living platform for sake education, hospitality, and innovation.

Our Master of Sake is a focused apprenticeship at one of our partner sake breweries, studying the specifics of the ancient art of sake and discovering how a modern brewery functions, with a great insider's view of the tireless work of a sake brewer! We offer the course with selected sake brewery partners in Japan and in English with @zenkurosake 🇳🇿

Kaiserは、客室乗務員として世界中を飛び回る中、ワイン教育をきっかけに日本酒と出会いました。その奥深さと文化的背景に魅了されて以来、西洋の食文化やビジネスと日本酒の繋がりに強い興味を持ちました。現在、アメリカでMBAを取得中です。日本酒の技術・文化の理解をもっと深く理解したいという思いから本コースに参加しました。将来、ニューヨーク州北部の高品質な水とローカル米を活かしたプレミアム日本酒を醸造する予定です

今回、SSA研修生の受け入れをして下さった西山酒造場に深く感謝いたします。1849年創業、176年にわたり伝統を守り続けながら、革新を重ねてきました。昨年新たに、自然豊かな地元の恵みを体感できる 酒・発酵・芸術の複合施設「鼓傳」がオープン。ここでは、 酒類と白砂糖を使わない発酵スイーツのショップ 、カフェ、レストラン、宿泊施設が備わり、日本酒や発酵文化を深く学べるワークショップも開催されます。
 
『Master of Sake (マスター・オブ・酒)®』は、伝統的な酒造りを学び、醸造家育成を目的とした資格取得コースです。オンライン研修から始まり、実際に酒醸造所で蔵人と2ヵ月間過ごし、日本の歴史や文化、地域と風土、自然に触れながら、日本酒の理解を深めます。開催蔵は、SSA酒蔵パートナ―、英語のコースは全黒で開催中です。
